New On The Blog: 30 easy dinners in less than 30minutes. While we normally don't travel over spring break, my parents wanted to take us to The Smoky Mountains... so we agreed. 😃 The kids had so much fun swimming, zip-lining, rock climbing, playing at the indoor waterpark, watching TV with unlimited channels, and going out to eat. Of course, a visit to the Smokies wouldn't be complete without some hiking too -- we found the Appalachian Trail and climbed Clingmans Dome. We returned home to a flooded basement (yes, the basement we just updated) and no internet access due to storms while we were gone. BOO! So the last few days have been a bit crazy, especially since I intentionally went offline for all of spring break. I made it to the library to use their internet so I could get this email out to you today... Also, I'm amazed how much "extra" time I have at home without the internet! Simple Food. Springtime often means busy weeknights, rushing to and from various activities. Our family doesn't have much on our calendar these next couple of months, but the kids always want to get back outside after dinner -- so these easy 30-minute meals are on rotation! This is a great incentive to clean out some of your paper clutter and immediately get it shredded for free! My favorite picture from our week in Tennessee is from a morning we hiked and found an OLD (early 1800s) farmstead. This is straight off my iPhone -- no editing or filters! Isn't it gorgeous with the flowering Dogwoods and natural rocky path -- never mind how they actually built this home in the middle of a mountainous forest without roads or power tools! Here's our family standing in front of the house with the barn in the distance. 🥰 And finally, after nearly 3 years of searching for a hot drink I enjoy drinking (you know, to feel more like an adult) I finally found one! Celestial Seasonings Honey Vanilla Chamomile tea. The trick is to only let it steep for a minute so it's not too strong (I reuse the teabag).
