A few weeks ago, I felt an "itch" to clean out our pantry cabinets... and I promptly devoted the better part of one afternoon to cleaning, decluttering, consolidating, refilling, and re-organizing our extra food (and a little in the freezer and fridge too).
I made mental notes of what foods should be used up, and committed to an eat-from-the-pantry challenge for the next few weeks.
I've had fun getting creative with our meals, I'm enjoying a more organized kitchen, and I saved a bunch by not purchasing many groceries the last couple of weeks (see some of my meal and snack ideas in the recipe section below).
Also, this drawer in my kitchen is bringing me all sorts of joy -- I love having all these bag/foil options neatly arranged at my fingertips!
Simple Food.
This easy Mexican Skillet tastes great, is fantastic as leftovers, freezes well, uses super frugal ingredients, is naturally gluten-free, and is a great way to clean out some of your pantry and freezer stockpile!
Whenever I mention my yearly eat-from-the-pantry challenges, I always get all sorts of questions... so I thought I'd share exactly how I run this self-imposed challenge (and hopefully give you a few ideas too).
Spring is officially here -- which means our stinky pear trees are blooming gloriously, and our front yard is almost always filled with neighborhood kids playing football, soccer, tag, or capture the flag!
New York! Dave went to New York as a chaperone for his school's "music tour" and snapped some cool pictures -- here are 2 of my favorites.
1. The Statue of Liberty.
We just finished a read-aloud about "The Making of Lady Liberty" so it was fun to see Dave's pictures. The amount of work, money, and time that went into creating this statue, disassembling it, packing it for the journey across the ocean, and then reassembling it here in America (all before modern technology) is mind-boggling. Hopefully we can take the kids someday.
2. The Skyline with the One World Trade Center.
Dave said it was absolutely amazing. It's so cool that engineers designed the tower to be exactly 1,776 feet tall (the year our country was founded).

Happy Homecomings. One positive thing about having a dog is how excited he is to greet everyone who comes into our home... especially when the kids get off the bus every afternoon. They love coming home to him too! 🥰
