I often plan a slow-cooker meal or something grilled for dinner; and for lunch, we enjoy what our kids call "meat and cheese", but what the more sophisticated Pinterest world calls "a Charcuterie Board" (pronounced shär KŌŌ derē). It's such a simple (and fun) meal that works with whatever you have in the house. Plus, if you eat it right from the tray, there are no dishes to wash!
